Weekly Salad: Beets & Goat cheese

Honey Balsamic

Not to be dramatic, but this recipe is pretty much my favorite ever!  I've enjoyed this meal twice since October and I'm looking forward to it at least once more before spring.  It's easy to prepare, not too expensive, and almost fancy! As for the taste, it's warm, hearty, and full of Earthy flavor.  The perfect winter salad, really!  My pal Melody has joined me on my salad journey, which has made the habit much easier to keep up with.  Can't wait to show off what we come up with next week :)
