Weekly Salad: Apple, Cheddar & Bacon



Ingredients:
Mixed Greens
Spinach
Granny Smith apple
Cheddar cheese pieces
Dried cranberries
Walnuts
Bacon, crumbled (optional, o'course)

Dressing:
Balsamic Vinaigrette

This was such a comforting dish! I had planned on heating up the dressing to make it a warmer salad, but obviously (judging by the crazy/random arrangement) I was too hungry to do that!  But I was happy with it anyway, and I'm glad I didn't overdo it with the bacon (that's one piece crumbled on top), but I just loved a bit of it in combination with the apple and cheddar.  Highly suggested! Next time, I'm excited to play with something in season, yum!  Any ideas for winter salads? Maybe.. butternut squash?

  4. some roasted asparagus, roasted beets, or some goat cheese could also be yummy additions to this salad!
