Weekly Salad: Spinach, fruit & walnuts



Ingredients:
Mixed greens
Spinach
Strawberries
Mandarin oranges
Dried cranberries
Walnuts
Blue cheese crumbles

Dressing:
Raspberry Vinaigrette

This salad turned out great! How do you feel about fruit in your salad? I have to say I'm a fan, and I feel like this mix is a pretty classic one. The greatest thing about it is that it takes hardly any time to prepare! Just slice some strawberries (freeze the rest for smoothies like I did?), open a can of oranges, a quick drizzle of dressing and dinner is ready. Plus, the colors were great, and it was fun sprinkling everything artfully into the bed of greens. For the next one I'm thinking grilled chicken should be involved, but I'm also craving an asian/ginger taste so...who knows! I'm enjoying this new habit so much, I'm actually getting the urge to make another healthy food change. I wonder what it will be? :)
