Weekly Salad: Citrus Butternut Squash with Spinach

Butternut squash, roasted
Dried cranberries
Blood orange segments
Peanuts (optional)

Tangerine & Rosemary with Olive Oil

This was so light and sweet! The squash added a sort of warm, comforting element and the blood oranges provided tons of flavor and juice.  And the colors are so pretty & appetizing! We served the dressing warm too, so I think it was appropriate for end of winter, beginning of spring.  Most of the ingredients are things I definitely don't eat everyday, in fact I think it was my first time trying a blood orange, so it was kind of an exotic treat!
